It looks like there are some third-party/external apps causing a conflict, this is caused by other apps installed or uninstalled - because when you uninstalled an app, the code is left behind, which causes issues and it's hard to track.
I would suggest you download a new theme by downloading and installing a new theme and copying the theme settings of your old theme to the fresh new theme:
The issue should not be there anymore, you can check the brand-new theme (that is without any app integration). You would still need to reinstall any code added by third-party apps, in this case - you need to contact the APP Developer for support.

Color swatches started to appear like this all of the sudden, no changes were made to the theme or the code. Same is true for both desktop and mobile.
